Food & Wine Magazine asked us to participate in their digital cookie swap so we shared this cookie recipe with them. In Albane's family, these cookies were typically made with any kind of ground nuts and served on their own. We changed the ground nuts to ground sesame seeds and added her concord grape jam to make a sandwich cookie.
For the recipe:
- 2 egg whites
- 115 grams confectionary sugar
- 115 grams sesame seed powder (found in many Asian food stores)
- pinch of salt
- 1/2 teaspoon vanilla paste
- concord grape or berry jam
Set the oven at 350F.
Whisk the egg whites and sugar over a double boiler until warm to the touch.
Beat to stiff peaks then fold in the sesame seed powder and the vanilla paste.
Pipe 1 inch rounds on a sheet pan and bake for about 5 to 7 minutes, rotating once, until barely golden.
Cool and assemble sandwich cookies by placing a little dab of berry jam between two cookies. Refrigerate.
