Bring some New Orleans into your home by celebrating Mardi Gras with buttermilk beignets! Nothing beats sitting at Cafe du Monde during Mardi Gras but these will keep you dreaming at least!
For the recipe:
- 5 grams of yeast
- 100 grams of milk
- 130 grams of buttermilk
- 240 grams flour
- 2 egg yolks
- 30 grams of canola oil
- 2 egg whites
- 70 grams of sugar
- bananas, rum, sugar
- powdered sugar
To make the batter:
Combine the wet ingredients together (milk, buttermilk, egg yolks and canola oil) and mix to combine. Sprinkle the yeast on top to dissolve.
Place the flour in a bowl and make a well in the center. Pour half of the buttermilk mixture in and start combining. Once the ingredients start coming together, add the rest of the wet ingredients to form a loose batter. Cover and set aside for 2 hours.
When you're ready to make the beignets, whip the egg whites with the sugar to stiff peaks and fold into your batter.
To fry the beignets:
Fill a pot with oil (sunflower, canola, or grape seed oil) to at least 3 inches high and to 375F on a candy thermometer ( this will take some time and adjustment).
From here you can make either plain beignets or banana beignets.
For plain beignets, it's very simple, just drop some batter in!
For banana beignets, combine sliced bananas with rum and sugar to taste. Drop them into the batter and into the oil.
Fry your beignets until golden brown, then remove excess oil by placing them on a paper towel. Sprinkle with a generous amount of powdered sugar and eat them as is or for added yumminess, serve them with a delicious jam!
