Pestos are simple to make and add so much flavor to any dish. You can easily change the nuts and herbs to obtain a different flavor every time, we never tire of them!! We made this walnut pesto with our windowsill herbs (parsley and basil) to celebrate spring!
For the recipe:
- 100 grams walnuts, toasted in the oven until golden
- 100 grams basil and parsley, combined
- 30 grams grated hard cheese
- 1/2 teaspoon salt
- 1 teaspoon lemon juice
- 1 garlic clove
- 180 grams olive oil
- pepper to taste
Combine first six ingredients in a food processor and mix until combined.
Add the olive oil slowly while mixing. Check the seasoning, add pepper if you'd like.
Eat right away (which is what we did!) or for longer storage, try freezing the leftover pesto, it might come in handy for a last minute meal!
