Plums are one of our favorite fruits to make jams with, they are sweet but also tart and combined with spices like star anise and vanilla bean, they make a perfectly balanced jam! Think about those cold winter months, popping one of these jars open will be magical!
For the recipe:
- 400 grams plums
- 250 grams sugar
- 1/4 lemon
- 1/4 star anise
- 1/4 vanilla bean
Wash the plums. Cut and remove the pits.
Place the plums, sugar, lemon and spices in a pot and bring to a boil for 2 minutes.
Remove from heat and with a strainer pick out most of the fruit and let them drain and cool over the pot.
With your fingers, remove the skin from each plum, they should come right off.
Return the plums to the pot and bring back to a boil. Skim any foam that collects on top.
Check the set by pouring a small amount on a cold plate and seeing if it sets. You can also check the set with a spoon, seeing if the liquid dripping at the bottom starts to set up.
