If you can't make it to warmer grounds this winter, don't worry, there is always citrus marmalade. The bright aromas and flavors will surely beat your winter blues. Use it on toast, pair it with cheese, make a soufflé... so many possibilities. Our favorite way to enjoy citrus marmalade is with yogurt!
For the recipe:
- 400 ml of citrus juice (2 grapefruit, 2 navel oranges, 1 lemon)
- 270 gr sugar
Makes one 8oz jar
Scrub the grapefruit, oranges, and lemons under water.
Remove the citrus peel, making sure to leave behind the white pith. Blanch them twice by dropping them in boiling water for 1 minute each time. Change the water for the second blanching.
Cut the strips of citrus peel into a dice or as desired, thin long strips works as well.
Place the juice, citrus peel, and sugar in a pot and bring to a boil.
Skim any foam that collects on top.
Check the set by pouring a small amount on a cold plate to see if it gels. Jar it up when it's ready!
