Mustard is a great ingredient yet it is often underutilized in the kitchen. Sure, you use it to make vinaigrettes or you spread it on burgers or hot dogs but what about trying to cook with it? In this recipe, mustard adds a punch of flavor and turns this simple tart into a very flavorful and delicious lunch or dinner.
For the recipe:
- 1 sheet of frozen puff pastry
- 4 small tomatoes
- 2 tablespoons french dijon mustard
- 100 grams of emmentaler swiss cheese or comté cheese
- herbes de provence to taste
- salt and pepper to taste
Set your oven to 400 degrees F.
Start by defrosting the puff pastry sheet. Cut it lengthwise to get two small rectangles.
Place them on a baking sheet covered with parchment paper.
Spread one tablespoon of dijon mustard on each sheet of puff pastry, making sure to leave half an inch on the edges of the dough.
Add sliced or grated emmentaler cheese on top, also making sure to leave a half inch on the edges.
Next, add sliced tomatoes and sprinkle with herbes de provence, salt and pepper.
Bake at 400 F for 5 minutes then lower to 350F and bake for another 15 minutes or until golden brown.
