Homemade mustard is a fun project to play around with in the kitchen. Use a basic recipe and add or change ingredients to make a different mustard every time. You can also change the texture from grainy to smooth and use different mustard seeds. It's all about experimenting and fine tuning.
For the recipe:
- 50 grams mustard seeds
- 70 grams white wine vinegar
- 70 grams water
- pinch of salt
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 20 grams maple syrup
Combine all ingredients into a jar and let stand at room temperature for 24 hours.
Place in a mixer and process until you get desired consistency.
Keeps in the refrigerator for 1 month.
