We've been going bananas this month. Literally! Our first recipe is a fun, last minute take on banana ice cream. The formula is simple: use a frozen banana, add flavorings, and mix. This gets you really close to the real thing and it so happens to be vegan. We added almond butter, honey and a pinch of salt to ours.
For the recipe:
Makes enough for 4 servings
- 4 bananas
- 2 Tbsp almond butter
- 1 Tbsp honey
Peel the bananas and cut into slices. Freeze for at least 2 hours.
Place the frozen banana slices into a food processor fitted with blade and pulse until crumbly.
Add the almond butter and honey and process until light and airy.
Freeze for at least an hour before consuming.
